This combination might sound a little unusual, but I promise that the addition of bacon grease and garlic makes the flavors come together remarkably well!
This simple vegetable side dish is a lovely paring with fish, pork or chicken. To make things a little simpler, I use the frozen artichoke hearts from Trader Joe’s. You could also use canned artichoke hearts, but it’s more difficult to find these without the addition of some preservatives. If you use the canned variety, just make sure to drain and rinse the artichoke hearts first.

Braised Cauliflower, Leeks and Artichoke Hearts

Ingredients
- 1 ½ cups cauliflower flowerets
- 1 ½ cups chopped leeks
- 1 ½ cups artichoke hearts
- 2 garlic cloves, minced
- 2 Tbsp bacon grease (or other yummy cooking fat)
Instructions
- Heat bacon grease in a skillet over medium-high heat.
- Add veggies and garlic and cook, stirring occasionally, until veggies are cooked (about 15 minutes). There should be enough water from the veggies to keep them from sticking, but if they do start to stick, add 1 Tbsp of water to the pan.
