Evaporated cane juice is a form of sugar that is derived from sugar cane. It is much less processed than table sugar, so it retains more trace minerals than the overly-processed white sugar used in the majority of conventional baked goods. I occasionally like to use evaporated cane juice, because it can replace white sugar 1:1 in baking recipes and helps to recreate that sticky-sweet, crunchy flavor and texture that is hard to find using more common Paleo sweeteners. All of these reasons are why I like to include evaporated cane juice at least as an option in many of my traditional recipes, like:

- Smoked Pork Shoulder
- Chocolate-Glazed Chocolate Donuts
- Chocolate Chip Cookies
- Bacon-Apple Chicken Burgers with Maple-Cranberry Sauce

- White and Dark Paleo Mint Chocolate Bark
