Pancetta is an Italian-style bacon that is made from pork belly and cured in salt plus some spices. In its country of origin, pancetta is typically consumed raw. There are two types of pancetta: rolled (arrotolata, common in northern Italy) or flat (stesa, common in southern Italy). The flat variety is often cubed and then grilled or otherwise cooked and added into other dishes. I love the incredibly rich and salty flavor that pancetta adds to any dish! Traditionally-prepared pancetta is a great source of protein and stable, saturated fats. There is also a lot of sodium in this dish from the curing process, though it is less of a concern for those of us on the Paleo diet (i.e., not consuming processed foods without tons of added sodium!). Pancetta is not likely to be rich in other micronutrients, but it sure does make an awesome treat for special occasions!
