Pork shoulder, also called “Boston butt” or “pork butt,” is the cut of pork that is made from the upper part of the shoulder. This is the most common cut used for pulled pork because of its fat content; slow-cooking this cut of meat creates a delectable, tender dish that is so versatile like in my Pulled Pork Wraps with Lime Basil Pesto and Pickled Shallots! Pork shoulder is also great when smoked, as in my Smoked Pork Shoulder. Since this cut is higher on the fat content, opting for pastured pork is the best way to maximize fat-soluble vitamin intake.
