Pumpkins are a round, orange variety of squash that is known for its feature in autumn dishes and decorations. Grown for these purposes and harvested in the fall, pumpkins are native to North America, dating back to at least 7000BC in Mexico! Despite its common featuring in desserts like Pumpkin Pie and Pumpkin Gingerbread Muffins, pumpkin pairs amazingly well with savory flavors and for any season, as in my AIP-friendly Spanish Picadillo and Rustic Bacon and Pumpkin Soup.
From a nutritional perspective, pumpkin isn’t that exciting. 100g provides about 50% of RDV for for vitamin A, but the remaining vitamins and minerals are only available in trace amounts.
Fresh pumpkin can be found at the grocery store during the fall and winter months, but pureed pumpkin can be purchased year-round on Amazon!
