Rabbit meat is yet another meat that has become less popular in the current culture of the United States (though it is still consumed in many other parts of the world, like in traditional French cuisine). I find that rabbit is a great way to mix up our dinner options, and I love that rabbit generally comes with gimlet! That way, we can incorporate all of the parts of the animal into just one or two recipes. Nutritionally, rabbit is a great source of vitamins B3, B6, and B12 as well as the dietary minerals phosphorus, zinc, and selenium.
