Steak is the cut of beef that comes from the hindquarter. While there are many cuts within the steak variety, the biggest difference is the amount of fat per serving. And, since the fat is what varies, that means that the vitamin content will vary according to the quality of the meat (that is, grass-fed meat will have more fat-soluble vitamins). To make sure that I’m getting the best quality meat available, I get my steak from either a farmers’ market or US Wellness Meats.
